Crockpot Chicken Chili

An easy, protein-packed crockpot chili made with chicken breast, white beans, peppers, and cozy spices. Top it with avocado, cheese, and/or sour cream for the ultimate bowl!

Ingredients

16 oz skinless chicken breast

2 cups canned white beans, drained and rinsed

1 cup red onion, chopped

1 yellow bell pepper, chopped

1 red bell pepper, chopped

1 orange bell pepper, chopped

1 cup chicken bone broth

1 Tbsp olive oil

1 tsp cumin

1 Tbsp paprika

2 cloves garlic, minced

Salt, to taste (about 1 dash, more if needed

Instructions

  • Add all ingredients except the optional toppings to a crockpot (slow cooker). Stir lightly.
  • Cover and cook on LOW for 5–6 hours, or until the chicken is fully cooked and easy to shred.
  • Remove the chicken, shred it with two forks, then return it to the crockpot and stir to combine.
  • Serve warm. Top with avocado, cheese, and/or sour cream as desired.
  • Serves 6

Notes

  • Taste and adjust salt at the end (broths and beans vary a lot).
  • Want it thicker? Mash a small portion of the beans in the crockpot before serving.
