Ingredients

  • 3 eggs
  • 1/4 cup almond flour
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla extract

Instructions

  1. In a large bowl, whisk together the eggs until well beaten.
  2. Add the cottage cheese and vanilla extract to the beaten eggs. Mix well to combine.
  3. In a separate bowl, whisk together the flour and baking powder.
  4. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
  5. Heat a non-stick pan or griddle over medium heat. Lightly grease with cooking spray or a small amount of butter if needed.
  6. Pour about 1/8 cup of batter for each pancake onto the heated surface.
  7. Cook until bubbles form on the surface and the edges start to look set, about 3-5 minutes.
  8. Flip the pancakes and cook for an additional 2-3 minutes on the other side, until golden brown.
  9. Repeat with the remaining batter.
