Ingredients
Scale
- 1 cup cottage cheese
- 3 eggs
- 1/4 cup almond flour
- 1/2 tsp baking powder
- 1/2 tsp vanilla extract
Instructions
- In a large bowl, whisk together the eggs until well beaten.
- Add the cottage cheese and vanilla extract to the beaten eggs. Mix well to combine.
- In a separate bowl, whisk together the flour and baking powder.
- Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
- Heat a non-stick pan or griddle over medium heat. Lightly grease with cooking spray or a small amount of butter if needed.
- Pour about 1/8 cup of batter for each pancake onto the heated surface.
- Cook until bubbles form on the surface and the edges start to look set, about 3-5 minutes.
- Flip the pancakes and cook for an additional 2-3 minutes on the other side, until golden brown.
- Repeat with the remaining batter.
Serving Suggestions:

Notes
Cooking slowly at a low heat is key to keep them from sticking and getting burnt.
